Earlier this year the hubs and I decided to do the 21-Day Fix again (that lasted for about 2-weeks) and I found this recipe on Pinterest for Baked Chicken Tacos from Alesha Haley — bonus they work with the 21-Day Fix meal plan!

Let me tell you, I’ve never made tacos this way before but I think I’ll never make tacos any other way moving forward. I love them, the hubs loves them and the kids love them (let’s be honest they’re the true test *wink*)
This recipe took us about 40 minutes from prep to table. It’s really easy as there’s practically no prep work, with the exception of dicing chicken!
Ashley offers two takes on the tomato option (a can of diced tomatoes or a jar of salsa,) we’ve tried both and both are pretty good! I prefer the diced tomatoes while the hubs prefers the salsa. You can’t go wrong either way. The only thing we add to the recipe is plain greek yogurt (sour cream substitute.) So if you’re doing the 21 Day Fix be sure to keep that in mind as it’s a protein so you’ll be using a portion of a red container.
